Billy the Kid Egg Croquettes
Make 4 servings.
- 3 - Tablespoon
- 3 - Tablespoon flour
- 3/4 - cup
- 1/2 - teaspoon
- 1/8 - cayenne
- 4 - hard-boiled
- 1/4 - cup breadcrumbs
- 1 - egg, slightly beaten
In a saucepan at low heat, melt butter. Stir in the flour and
gradually add the milk, salt and cayenne pepper.
Stir until ingredients
have thickened. Remove sauce from heat, add the chopped eggs and cool.

365° F about 3-minutes or until golden brown.
