Banana-Walnut Buckwheat Pancakes
Makes 6 to 8 servings.
1 - cup buckwheat flour
1 - cup all-purpose
4 - teaspoons
1 - teaspoon
egg, lightly beaten
1 - cup
1/2 - cup black or English
walnuts, finely chopped
Butter or margarine
In a large bowl, sift together the
buckwheat flour, all-purpose flour, baking powder, and salt. In another bowl, add the egg, milk,
bananas, and walnut. Mix.
Pour the egg-milk mixture into the
flour mixture. Stir just to combine. Heat your griddle and lightly grease. Using a 1/4-cup measuring cup, drop
batter onto the hot griddle.
Cook until your pancake edges turn
brown and the top has bubbles. Flip over and cook the other side. Serve with butter, maple syrup,
bananas and walnuts.
