Texas Spicy Drumsticks

Makes 6 servings (2 drumsticks each)Cowboy Cooking Recipes from

Baking Time: 45 min.


  •  12 - chicken drumsticks
  •    2 - Tablespoons chili powder
  •    2 - Tablespoons cumin powder
  •    1 - Tablespoon vegetable oil
  •    1 - medium onion, quartered and separated
  •    4 - ounces chipotle in adobe chili pepper
  •    3 - Serrano chili peppers
  •    3 - garlic cloves
  •    6 - ounces fresh orange juice
  •       Chopped cilantro to taste
  •    2 - cup plain yogurt
  •       Hot cooked rice


Preheat the oven to 400-degrees F.

  1. You begin by coating drumsticks with chili powder and cumin.  Place in skillet with oil and onion. Brown lightly, being careful not to burn spices. Add chipotle, Serrano, garlic, an orange juice.

  2. Place in ovenproof dish and bake until tender, about 45 minutes.  Remove drumstick to platter. Strain sauce remain in dish an place in saucepan.

  3. Heat until warm. Remove from heat and add cilantro and yogurt, off heat to avoid yogurt separating.  Pour over drumsticks. Serve with rice an d lots of sauce.
