Pioneer Marinated Mushrooms

Makes 1 quartCowboy Cooking Recipes from

Prep Time: min. 10 min.
Cooking Time: 5 min.
Chilling Time: overnight


  •    1 hard-boiled egg yolk, mashed

  • 1/2 cup malt vinegar

  • 1/2 cup vegetable oil

  •    1 teaspoon salt

  • 1/2 teaspoon pepper

  •    2 teaspoon chopped parsley

  •    2 teaspoons prepared mustard

  •    1 teaspoon garlic powder

  •    1 teaspoon onion powder

  •    1 Tablespoon plus 2 teaspoons brown sugar

  •    1 pound fried mushrooms (small or medium)


  1. In a saucepan, combine egg yolk, vinegar, vegetable oil, salt, pepper, parsley, mustard, garlic powder, onion powder, and brown sugar.

  2. Bring mixture to a boil and add mushrooms.  Cover and let boil for 5 minutes, stirring occasionally. 

  3. Immediately remove from heat and put in a quart jar.  When cool, refrigerate overnight.
