Shiloh Ranch Mountain Oysters

Ingredients:Cowboy Cooking Recipes from

  •    1/2 cup yellow cornmeal
  • 1 1/2 cups all-purpose flour
  •       2 cups beer
  •          Salt and ground black pepper to taste
  •       1 Tablespoon garlic powder
  •       2 pounds Mountain Oysters (calf testicles)
  •          Vegetable oil**


  1. You want to make the batter by combining the cornmeal, flour, and beer.

  2. Season with salt, pepper, and garlic powder to taste.  Slice the oysters about 1/4-inch thick.

  3. Dip into the batter.  Cook in hot oil until medium crisp. Best to serve while hot and enjoy.

** Use enough vegetable oil to fill your frying container halfway to the top (to allow for bubbling up and splattering) and to completely cover calf testicles while frying.
