Rodeo Layered Nacho Dip

  • 1 - can (16 ounces) refried beans

  • 1/2 - package (1-1/4 ounce) taco seasoning

  • 1 - carton (6-ounce) avocado dip (or make Rex's Avocado Dip)

  • 1 - carton (8-ounce) sour cream

  • 1 - can (4-1/2 ounces) chopped ripe olives (optional)

  • 2 - large tomatoes, diced

  • 1 - small onion, finely chopped

  • 1-1/4 - cups shredded Monterey Jack cheese

  • Corn chips


  1. 1) In a mixing bowl, combine beans and taco mix.  2) Spread bean mixture evenly into a 12x8x2-inch dish.

  2. 3) Layer ingredients (in order: avocado dip, sour cream, olives, tomatoes, and onion.)  4) Top with cheese.

  3. 5) Serve with large corn chips.
