6 - pounds ground
6 - teaspoon saltpeter
4 - teaspoon black
2 - teaspoon
3 - teaspoon mustard seed
3 - teaspoon hickory smoked salt
In a large bowl, mix beef, saltpeter,
pepper, garlic salt, mustard seed, and hickory smoked salt.
Mix as for a meat loaf. Cover and refrigerator for 24 hours.
Mix again and cover and refrigerate
another 24 hours.
Mix again and shape into logs. Place on a broiler pan rack or cake
racks, set in jelly roll pan.
Preheat oven to 250° F.
Bake for 8 hours.
Cool and keep refrigerated.
