Mountain Pass Homemade Beef Sausage

Chilling Time: 48 hrs
Baking Time: 8 hrs
Ingredients:
- 6 - pounds ground beef
- 6 - teaspoon saltpeter
- 4 - teaspoon black pepper
- 2 - teaspoon garlic salt
- 3 - teaspoon mustard seed
- 3 - teaspoon hickory smoked salt
Directions:
- In a large bowl, mix beef, saltpeter,
pepper, garlic salt, mustard seed, and hickory smoked salt.
Mix as for a meat loaf.
- Cover and refrigerator for 24 hours.
- Mix again and cover and refrigerate
another 24 hours.
- Mix again and shape into logs.
- Place on a broiler pan rack or cake
racks, set in jelly roll pan.
Preheat oven to 250° F.
- Bake for 8 hours.
- Cool and keep refrigerated.
