Corn Salsa
Makes
2 1/2 cups

Ingredients:
- 3 - Tablespoons vegetable oil
- 3 - Tablespoons flour
- 1/4 - cup bell pepper, chopped
- 1 - can (4 -ounces) diced green chiles
- 1/4 - teaspoon dry mustard
- 1 1/2 - cups tomato juice
- 1 - can Mexicorn, drained
Directions:
- In a saucepan, heat oil.
- Stir in flour and mix with whisk until
all flour is absorbed.
- Add bell peppers, chiles, and mustard
along with tomato juice.
- Simmer slowly until thickened slightly.
- Remove from heat and stir in corn.
