Rio Verde Fresh Fruit Salsa with Sweet Tortilla Chips

  • 2 - pints strawberries, remove stems and diced

  • 4 - kiwis, peeled & diced

  • 1 - Granny Smith apple, diced

  • 3 - Tablespoon orange marmalade

  • 1 - orange rind, grated

  • 1 - pint fresh blackberries, diced

  • 1 - pint fresh raspberries, diced

  • 1/2 - cup sugar

  • 6 - small flour tortillas

  • 1 - teaspoon sugar

  • 1 - cup cold water (8 ounces)

  • 2 - Tablespoons confectionery sugar


Preheat oven to 200 F.

  1. In a large bowl, you want to mix the strawberries, kiwis, Granny Smith apple, orange marmalade, orange rind, blackberries, and raspberries.  Sprinkle on the 1/2 cup sugar and toss lightly to blend the sugar.

  2. In a small bowl, mix sugar and water.  Then brush the tortillas with the sugar water.   Cut flour tortillas into chip sizes. 

  3. Place on an un-greased cookie sheet and baked 10 to 15 minutes.   Cool for 5 minutes and dust with confectionery sugar.
