Makes 24 squares
Prep Time: 20 min
Baking Time: 15 min + 50 min


  • 1     cup butter or margarine, softened
  • 2     cups plus 2 Tablespoon all-purpose flour
  • 1/2  cups confectioner's sugar
  • 4     eggs
  • 2     cups sugar
  • 6     Tablespoons lemon juice
  • 1/2  teaspoon double-acting baking powder
  • 1     cup pecans, chopped (optional)


Preheat oven to 325� F.

  1. In a medium bowl, combine butter or margarine, 2-cups flour and confectioners sugar until well mixed.
  2. Pat mixture evenly into 13x9-inch baking pan.
  3. Bake for 15 minutes.
  4. While baking, in a medium bowl, beat eggs slightly. Add sugar, lemon juice, remaining 1-Tablespoon flour, baking powder, and pecans. Stir until well mixed.
  5. Remove pan from oven and pour egg mixture over baked crust.
  6. Return pan to oven and bake for 40 to 50 minutes.
  7. If desired, sprinkle with additional confectioners sugar.
  8. Remove from oven and cool on wire rack. Cut into squares and enjoy.
