Cincinnati Style
Makes 8 servings.

Ingredients

1 - tablespoons butter

1 - pound lean pork, ground

1 - pound ground beef

4 - yellow onions, chopped

6 - cloves garlic, chopped

1 - tablespoon whole cumin seeds

4 - tablespoons chili powder

3 - bay leaves

2 - teaspoons cinnamon

2 - teaspoons allspice

2 - teaspoons Tabasco

4 - tablespoon cocoa powder

2 - tablespoons Worcestershire sauce

4 - tablespoons vinegar

1 - can (28-ounces) tomatoes, pureed

1 - tablespoon oregano

1/2 - teaspoon salt

Directions
  • Heat stockpot to medium heat and add the butter.  
  • Sauté pork, ground beef, onions, cumin seeds, chili powder, and bay leaves until the meat is just browned and the onions are clear.  
  • Drain and discard fat.
  • Add remaining ingredients, cover and simmer for 1-1/2 hours.  

1: Serve over spaghetti

2: Serve over rice

3: Serve with chopped yellow onions and grated cheddar cheese.

4: What ever your heart desires.

Picnicking & Tailgating

You can make the chili a day or two ahead of time.  Heat (on stove or in microwave) and pour into a thermos.  When you get to your picnic and tailgate party, it is nice and hot.
