Amy's Vegetarian Chili

This is a recipe my Cousin Cay sent me from her daughter Amy from the University of Virginia.

Ingredients:Chili Recipes from AlansKitchen.com

  •    1  red bell pepper, chopped

  •    1  green bell pepper, chopped

  •    1  yellow bell pepper, chopped

  •    1  jalapeno pepper, chopped

  •    1  small red onion, chopped

  •    3  garlic cloves, chopped

  •    1  can chili-style tomatoes

  •    1  can black beans, rinsed and drained of water

  •    1  can kidney beans, rinsed and drained of water

  •    1  can fat-free refried beans

  •    1  cup salsa (choose strength based on your preference)

  •    1  can tomato sauce

  •    1  teaspoon cumin

  • 1/2  teaspoon black pepper

  • 1/4  teaspoon crushed red pepper

  •    2  Tablespoons cilantro

Directions:

  1. In a large pot, combine all ingredients.   Heat on medium-high to a boil and reduce heat to low and simmer.  

  2. Serve over brown rice, with Healthy Choice shredded cheddar cheese on top. 

  3. Serve with Guiltless Gourmet tortilla chips or Baked Tostitos.
