Spoon Bread Casserole
Makes 6-8 Servings
Prep Time: 10 min. Baking Time 40 min.
Ingredients:
- 1 package (8.5 oz.) Corn
Muffin Mix
- 1/2 cup margarine or butter, melted
- 1 can (8 oz.) whole
kernel corn, drained
- 1 can (8 oz.) cream
style corn
- 1 cup sour cream
- 2 eggs
Cooking Directions:
Preheat oven to 375-degrees F. and grease 1-1/2 quart
casserole dish.

Pour margarine
or butter and corn into prepared dish.

Blend in sour
cream.

In a separate
bowl, beat eggs and stir into casserole along with muffin mix.
Blend thoroughly.

Bake 35-40
minutes or until center is firm. Serve hot with butter.
