Spinach Casserole

Makes 6-8 ServingsCasserole & Bake Recipes

Prep Time: 10 min.
Baking Time: 45 min.

Ingredients:

  •    1  package (8.5 oz.) Corn Muffin Mix
  •    1  package (10 oz.) frozen chopped spinach, thawed
  •    2  cups chopped onion
  •    2  Tablespoon margarine or butter
  •    2  eggs, beaten
  •    1  cup sour cream
  •    1  can (10-3/4 oz.) cream soup (celery, mushroom or chicken)
  •    1  teaspoon herb seasoning
  • 1/2  teaspoon garlic salt
  • 1/4  teaspoon pepper
  •        Swiss cheese, optional

Cooking Directions:/h3>

Preheat oven to 350-degrees F. and grease 1-1/2 quart casserole dish.

  1. Cook and drain spinach. Set aside.

  2. Saute onion in margarine or butter. Mix spinach with onion and set aside.

  3. In a mixing bowl, combine eggs, sour cream, soup, seasonings and muffin mix.

  4. Blend well and add spinach mixture.

  5. Pour into prepared casserole dish and bake 40-45 minutes.

  6. Sprinkle cheese on top (optional). Return to oven until cheese is melted.
