Angel Cake with
Orange Icing
Ingredients:
- 1 - cup
flour
- 1 - cup sifted sugar

1/4 - teaspoon salt

9 - egg whites

1/2 - teaspoon cream tartar

1 - teaspoon vanilla
-
2 - teaspoon orange juice
- Orange Icing (see below)
Directions:
Preheat oven to 325° F.
- Sift flour 5 times, sugar 5 times.
- Resift flour with salt and
half the sugar.
- Whip egg whites on a platter with wire whisk until
foamy.
- Add cream tartar and whip until stiff.
- Whip in balance of
sugar, a little at a time.
- Fold in flavoring, then sifted flour and
sugar, a little at a time.
- Pour into an ungreased 9-inch tube pan
and
- Bake for about 60 minutes.
- When cool spread with Orange
Icing.

Mix egg, sugar, flour, and butter and simmer over low flame,
stirring constantly, until it comes to a boil.

Place in top of
double boiler over boiling water, add orange juice and rind and
lemon juice.

Simmer for 10 minutes.

Spread on cake.
