Old-Time
Buckwheat Cakes
Makes 40 cakes
Ingredients:
- 1 - package active dry yeast

1/4 - cup water, lukewarm

1 - teaspoon sugar

3 - cups buckwheat flour

1 - cup milk

1 - teaspoon salt

2 - Tablespoons molasses
-
1 - cup water
-
1 - cup milk
Directions:
- In a small bowl, combine the yeast,
1/4-cup water and sugar.
- Allow to foam.
- In a large bowl, sift in the flour, milk,
and yeast mixture.
- Let stand overnight.
- In the morning, add the salt, molasses,
and water.
- Thin batter with milk and use as much of
the cup you need to make the batter thin.
- Pour batter on greased hot griddle and
cook until golden brown.
- Turn once.
