Breakfast Omelets

Makes 4 servingsBreakfast & Brunch Recipes from AlansKitchn.com

Total Time: 15 min.

Ingredients:

  • 5 - slices (3/4-ounce) Deli American Cheese

  • 8 - eggs, beaten

  • Salt, if desired

  • Pepper, if desired

  • Chopped red bell pepper, if desired

  • Chopped fresh parsley, if desired

Directions:

  1. Stack cheese slices. Cut into thin strips and coarsely chop. Set aside. In a medium bowl beat eggs. Spray 10-inch skillet with no-stick cooking spray. Heat skillet over medium heat.

  2. For each omelet, pour 1/3 cup beaten eggs into skillet. Cook for 30 seconds. Sprinkle with salt and pepper, if desired. Lift edge of eggs with spatula to allow uncooked portion to flow underneath, for 2 to 3 minutes, until mixture is set.

  3. Sprinkle 1/4 cup cheese over half of omelet. Gently fold 1 side of omelet over filling. Carefully slide omelet onto serving plate. Sprinkle with chopped bell pepper and parsley, if desired.
