Cheese Soufflé

  • 3/4 - cup milk
  • 3 - Tablespoon Tapioca
  • 1/4 - teaspoon salt
  • 3/4 - cup Shredded Mild Cheddar Cheese
  • 3 - eggs, separated


Preheat oven to 350°F.

  1. In a medium saucepan, mix milk, tapioca and salt. Let stand 5 min.
  2. Bring to boil on medium heat, stirring constantly. Remove from heat.
  3. Add cheese and stir until melted. Cool slightly.
  4. In a large bowl, beat egg whites with electric mixer on high speed until stiff but not dry. Set aside.
  5. In a medium bowl, beat egg yolks with wire whisk until thick and lemon colored.
  6. Add tapioca mixture; mix well. Gently stir in egg whites.
  7. Pour into 1-1/2-qt. baking dish. Place dish in large baking pan.
  8. Add enough hot water to baking pan to come 1 inch up side of baking dish.
  9. Bake 50 min. or until center is set. Serve immediately.
