  1. Sauté onions and garlic in the bacon fat for 2 minutes or until onions are translucent.  
  2. Add salsa and salt and cook for 30 minutes, stir occasionally.
  3. In a separate skillet, fry the tortillas in hot oil until soft.  (You can use the microwave to heat the tortillas. 
  4. Just place tortillas between paper towels and heat for 2 minutes.)  
  5. Drain and remove to heated plates, 2 to each plate.
  6. Fry eggs in tortillas skillet, place eggs onto the tortillas, spoon on the salsa sauce and serve. 
  7. Garnish with cilantro.
