Cinnamon Orange Bread

Preheat oven to 325� F.

  1. In a large mixing bowl, whisk together eggs, butter, and orange juice, flour, baking soda, baking powder and cinnamon.  After mixture is well mixed, add the peanuts.

  2. In a 9 x 5 inch loaf pan, coat and flour sides.  

  3. Pour in mixture and evenly distribute the mixture in the pan.

  4. Bake for 55 minutes or until browned.  To check for doneness, cut a knife into the center of the loaf.  You want the knife to come out clean.

  5. Cool on wire rack.  While cooling, begin the topping.  

  6. In a medium-mixing bowl, add cream and orange extract and beat until light and fluffy.  

  7. Use the topping to spoon over warm bread slices.
