Pumpkin Bread
Makes 1 loaf.

Ingredients

6 – eggs
4-1/2 - cups sugar
1-1/2 cup vegetable oil
1 – large can pumpkin
1 – teaspoon ground ginger
2-1/4 - teaspoon ground nutmeg
2-1/4 - teaspoon cinnamon
1 – teaspoon cloves
5-1/2 - cups all-purpose flour
2 – teaspoon baking soda
2-1/2 - teaspoon salt
2 – cups raisins
2 – packages dried mixed fruit, diced
1-1/2 - cups nuts

Directions

Preheat oven to 350° F.

  • In a mixing bowl, combine the eggs, sugar, and oil.  
  • Stir in the pumpkin, ginger, nutmeg, cinnamon, and cloves.
  • Carefully stir in the flour, baking soda, and salt.  
  • Finally, mix in the raisins, mixed fruit, and nuts.  
  • Pour batter into a loaf pan and bake 1-hour or until a tooth pick inserted into the center comes out clean.
  • For a better flavor, soak dried fruit and raisins in strong coffee water several hours or overnight.  
  • Drain, saving liquid to use instead of the water called for in the recipe.
