Golden State Prune Bread

1 cup all-purpose flour

1/2 - cup whole-wheat flour

1/2 - teaspoon baking soda

1/2 - teaspoon salt

1/2 - cup sugar

1 egg, lightly beaten

2 tablespoons butter, melted

1/2 - cup milk

1/2 - cup chopped cooked prunes

1/2 - cup prune juice

Preheat oven to 375-degrees F.

  • In a mixing bowl, sift together flour, whole-wheat four, baking soda, salt, and sugar.
  • In your electric mixer bowl, mix the egg, butter, milk, prunes and juice.  
  • Pour into the bowl, the flour mixture. 
  • Using a medium speed, blend with an electric mixer for about 2 minutes.
  • Spoon into a buttered 9 x 5-0 inch loaf pan.
  • Bake about 40 minutes to 1 hour.
