Cheesy Corn Muffins
Makes 16 muffins

Ingredients
- 1 - cup sour cream
- 1/4 - cup chopped fresh cilantro
- 2 - package (8 1/2-ounce) corn muffin
mix
- 2 - eggs
- 1 - cup (4 ounces) cheddar cheese,
shredded
Directions
Preheat oven to 400°F.
- In a medium bowl, you want to combine
sour cream, cilantro, muffin mix, and eggs.
- Stir just until moistened.
- Gently stir in cheese.
- Spoon batter into paper-lined muffin
cups.
- Bake for 15 to 20 minutes or until
lightly browned.
