Hush Puppies
Makes 8 servings

Ingredients

• 2 – cups water-ground cornmeal
• 1 – Tablespoon flour
• 3 – teaspoons baking powder
• 1 – teaspoon salt
• 1 – egg, well beaten
• 2 – cups milk
• 5 – Tablespoons onion, chopped fine
• 1/2 - teaspoon cayenne pepper
• 5 – cups vegetable oil

Directions

Preheat oil to 350-degrees.

1. Mix corn meal, flour, baking powder, and salt in a large mixing bowl. 
2. In a smaller mixing bowl, combine the egg, milk, onion, and pepper.  
3. Pour into the dry mixture and beat until stiff batter.
4. Roll into small balls and drop into the hot oil.  
5. Cook until brown and with a good crisp crust.  They will float when done.  Drain on paper towel.
