Zucchini Bread

Makes 24 servings (2 loaves) Bread Recipes from AlansKitchen.com

Prep Time: 20 min
Baking Time: 55 min

Ingredients:

  •    3  cups all-purpose flour
  •    1  Tablespoon ground cinnamon
  •    1  teaspoon salt
  •    1  teaspoon baking soda
  • 1/4  teaspoon baking powder
  • 1/4  teaspoon ground cloves
  • 1/4  teaspoon ground nutmeg
  •    2  cups sugar
  •    1  cup butter, softened
  •    3  eggs
  •    1  Tablespoon vanilla
  •    2  medium (2 cups) zucchini, shredded
  • 1/2  cup chopped walnuts

Cooking Directions:

Preheat oven to 350-degrees F.  Grease bottom only of 2 (8x4-inch) loaf pans and set aside.

  1. In a large bowl, combine flour, cinnamon, salt, baking soda, baking powder, cloves and nutmeg. Set aside.

  2. In a large bowl, mix together sugar, butter, eggs and vanilla. Beat at medium speed, scraping bowl often, until smooth.

  3. Reduce speed to low and add flour mixture.

  4. Continue beating until well mixed. (Mixture will be very thick.)

  5. Stir in zucchini and walnuts.

  6. Spread batter into prepared pans.  Bake for 55 to 65 minutes or until toothpick inserted in center comes out clean.

  7. Cool 10 minutes; remove from pans. Cool completely; store refrigerated.
