Joplin Sirloin Steak

Directions

Prepare Grill to Medium Heat.

  1. Trim excess fat from steak, and wipe dry.  
  2. Make a paste of butter, mustard, paprika, salt and pepper.  Rub on both sides of steak.  
  3. Let seat for 15 minutes.
  4. Place steak on grill and cook for 5 minutes.  
  5. Brush side with a mixture of olive oil and Worcestershire sauce.
  6. Turn, let cook for 5 minutes.  
  7. Brush with oil and Worcestershire sauce.
  8. Turn and cook for 3 minutes, brush with oil.  
  9. Turn again and cook for 3 minutes, brush with oil.  
  10. To check for doneness: cut the center with a sharp knife.
  11. Garnish with minced parsley.

Picnicking & Tailgating

Put the rub on before leaving.  Wrap in plastic storage bag and place in ice chest.  After grill is ready, pop them on the grill.  

An alternative is to place the steak (without rub) and place in storage bag and then into the ice chest.  Put the rub on at the picnic or tailgate site, about 15 minutes before the grill heat is ready.
