Coriander & Peppercorn Rub

  1. In a skillet at moderate heat, place the coriander seeds, oregano, black peppercorns, sugar, and salt and toast for 2-minutes or until fragrant.  
  2. Add to a spice grinder and grind.  
  3. Place in a small bowl.

Picnicking & Tailgating

Put the rub on the meat before taking to the picnic or tailgate location.  Makes enough for 3 pounds of fish or poultry.
