Grilled Santa Fe Chicken

  • 2 - Tablespoon taco seasoning mix

  • 1 - Tablespoon olive oil

  • 1/2 - teaspoon cumin

  • 2 - garlic cloves, minced

  • 4 - fresh chicken leg quarters


  1. In a small bowl, add taco seasoning, olive oil, cumin and garlic. 

  2. Stir until smooth. 

  3. On a large platter, lay on chicken. 

  4. Rub spice mixture evenly over chicken. 

  5. Let chicken stand 5 to 10 minutes or cover and refrigerate up to 8 hours.

Preheat grill to medium-high, according to manufacturer’s directions.

  1. On the grill, lay on the chicken and cover. 

  2. Cook for 25 to 30 minutes or until done (internal temp 180°F) (turning occasionally).

Picnicking & Tailgating

Place in ice chest.  When the grill is ready, just take them out of the ice chest and grill.
