Tangy Grilled Chicken

Cooking Time: 1 hrs
Grilling Time: 45 min

Ingredients:

  • Sauce Ingredients:
    •    2  Tablespoons butter
    • 1/4  cup finely chopped onion
    •    2  teaspoons finely chopped fresh garlic
    • 1/4  cup pineapple juice
    • 1/4  cup Worcestershire sauce
    •    1  can (14 1/2-ounce) whole tomatoes
    •    2  Tablespoons firmly packed brown sugar
    •    2  Tablespoons molasses
    •    2  Tablespoons cider vinegar
    •    1  teaspoon crushed red pepper flakes
    • 1/4 teaspoon liquid smoke
  • Chicken Ingredients:
    •    1  (3 to 4-pound) frying chicken, cut into 8 pieces

Cooking Directions:

  1. In a 2-quart saucepan, melt butter until sizzling. Add onion and garlic.

  2. Cook over medium heat for 1 to 2 minutes until onion is crisply tender.

  3. Stir in pineapple juice, Worcestershire sauce, whole tomatoes, brown sugar, molasses, cider vinegar, red pepper flakes, and liquid smoke.

  4. Reduce heat to low and cook for 1 hour.

  5. Reserve 1 cup sauce and set aside remaining sauce.

Meanwhile, heat one side of gas grill on medium or charcoal grill until coals are ash white.  Place coals to one side in charcoal grill.  Make aluminum foil drip pan and place opposite coals.

  1. Place chicken on grill over drip pan.

  2. Grill, turning occasionally, for 25 minutes.

  3. Continue grilling for 15 to 20 minutes, basting occasionally with reserved 1 cup sauce, until chicken is no longer pink.

  4. Serve chicken with remaining sauce.
