Grilled Chicken
Breast de Ancho
Makes 4 servings
Ingredients:

Marinade:

2 - teaspoon green onion, minced

1 - teaspoon garlic, minced

2 - Tablespoons ground ancho chile
-
1 - lime, juiced
-
1 - teaspoon ground black pepper
-
2 - teaspoon salt

1/2 - cup olive oil
-
Chicken
Directions:
- In a glass or ceramic casserole dish, mix red onion, garlic,
chile, lime, black pepper, salt and oil. Place the chicken
breast into marinade mixture.
- Cover and marinade for 2 to 3 hours in refrigerator. Prepare
a medium-hot grill fire and well oiled.
- Take the chicken out of marinade. Make sure you discard the
marinade. (If you want to have the marinade as a dressing on
the side, make a fresh mixture where you don’t mix with raw
meat.)
- Place the breast on the grill and cook 2 to 3 minutes on
each side. You only want to turn once.
- You can test by cutting
into the breast. You do not want any signs of pinkness.
