Tex-Mex Barbecue Chicken
Makes 4 servings.
Ingredients
- 1/2 cup barbecue sauce (your choice)
- 1/3 cup Lemon Juice from Concentrate
- 1 envelope (1.25 ounces) taco seasoning
mix
- heavy duty aluminum foil
- 4 ears corn, shucked
- 4 fresh chicken leg quarters
Directions
Preheat grill to medium-high, according to
manufacturer’s directions.
- In a small bowl, add barbecue sauce,
lemon juice and taco seasoning.
- Wrap each ear of corn in foil packet,
leaving room for heat circulation.
- Grill chicken for 40 to 50 minutes or
until done (internal temp 180° F).
- Baste with barbecue sauce mixture and
turning occasionally.
- Grill corn packets on covered grill,
turning once, 16 to 20 minutes or until corn is tender.

Place in ice chest.
When
the grill is ready, just take them out of the ice chest and grill.
