Blue Cheese New York Strip
Steaks
Makes 4 servings
Blue Cheese Butter
4 - Tablespoons (1/2 stick) unsalted butter, softened
2 - ounces (about 1/3 cup) crumbled blue cheese, such as
Roquefort
1/4 - teaspoon granulated garlic
1/4 - teaspoon freshly ground black pepper
4 - (about 3/4 pound each) New York strip steaks, cut 1
inch thick
Extra-virgin olive oil
Kosher salt
Freshly ground black pepper
4 lemon wedges

In a small bowl, add butter, blue cheese, garlic and
pepper.

Mix.
Prepare a high fire in your grill.

Before grilling, let the steaks to stand at room
temperature for 20 to 30 minutes.

Lightly brush or spray
both sides of the steaks with olive oil.

Season steaks with
salt and pepper to taste.

Grill until the internal
temperature reaches 145° F for medium rare, for 8 to 10
minutes, turning once halfway through grilling time.

Remove from the grill and allow to rest for about 5
minutes.

Serve warm with the butter smeared over the top and
lemon wedges served on the side.

Mix the ingredients at home and wrap in plastic wrap.
Then place in plastic container and cover.
Put container in ice chest to keep cool.
Cook on the grill just as you would do at home.
