Grape Chicken Flatbread Pizza

Total Time: 30 min.

Ingredients:

  • Butter

    • 1/4 - cup butter with olive oil & sea salt, melted

  • Roasted Grapes

    • 1/2 - pound red grapes, stems removed

    • 1/4 - teaspoon Italian seasoning

    • 1/8 - teaspoon black pepper

  • Pizza

    • 1 - teaspoon finely chopped fresh garlic

    • 4 - round flatbreads (6-inch)

    • 1 - cup shredded rotisserie chicken

    • 1/2 - cup crumbled feta cheese

    • 1 - teaspoon chopped fresh thyme

Directions:

Heat oven to 425F. Line 15x10x1-inch jelly-roll pan with aluminum foil. Set aside.

  1. Combine 1 teaspoon melted butter with olive oil & sea salt and grapes in medium bowl.  Stir to coat grapes well.  Add Italian seasoning and black pepper; mix well.  Place grapes in single layer on prepared pan.  Bake for 14 to 17 minutes or until grapes begin to soften and give off some juice.  Cool completely (about 10 minutes).  Cut roasted grapes in half.

  2. Combine remaining melted butter with olive oil & sea salt and garlic in small bowl. Brush 1 tablespoon garlic mixture evenly onto each flatbread.  Top each with 1/4 cup chicken, 2 tablespoons feta, 1/4 cup roasted grape halves and 1/4 teaspoon thyme.

  3. Place each flatbread pizza onto ungreased baking sheet.  Bake for 5 to 7 minutes or until crisp around edges and toppings are heated through.
