Strawberry Bon Bons

Recipes from AlansKitchen.comMakes about 2 1/2 pounds or about 4 dozen candies

Ingredients:

  • 1 - can (14-ounce) Sweetened Condensed Milk (NOT evaporated milk)
  • 1 - package (14-ounce) flaked coconut
  • 1 - package (6-ounce) strawberry flavored gelatin
  • 1 - cup ground blanched almonds
  • 1 - teaspoon almond extract
  • Red food coloring
  • 2 - cups confectioners' sugar
  • 1/2 - cup heavy whipping cream
  • Green food coloring

Directions:

  1. In a large bowl, combine Sweetened Condensed Milk, coconut, 1/3 cup gelatin, almonds, almond extract and enough red food coloring to tint mixture a strawberry red shade.
  2. Transfer mixture to food processor and pulse several times to form paste.
  3. Chill until firm to handle.
  4. Shape spoonfuls of coconut mixture (about 3/4 tablespoon) into strawberry shapes.
  5. Sprinkle remaining gelatin on flat dish.
  6. Roll each strawberry into gelatin to coat.
  7. Place on waxed paper-lined baking sheet and refrigerate.
  8. To make frosting "hulls", combine confectioners' sugar, whipping cream, and green food coloring until well blended.
  9. Fill pastry bag fitted with open star tip with frosting; pipe small amount on top of each strawberry to form hull.
  10. Store tightly covered in refrigerator.
